"Ricecraft" could just as easily have been called, "rice around the world" or "everything you ever wanted to know about cooking with rice." Although, based on the author's last name, I'm guessing she is Chinese, she covers rice dishes from cuisines all over the world. I particularly love this book because it has recipes and instructions for making your own rice noodles and, especially, “chang-fen,” which are wide rice noodles with things like baby shrimp and green onions embedded in them or just plain and rolled around flavorful fillings. These noodle rolls aren't that easy to find in your average Chinese restaurant, and I love them, so, needed a recipe. I may have had a specific reason for wanting this cookbook, but once I got my hands on it and began to look through it, I discovered many, many interesting recipes for rice dishes I've had in various ethnic restaurants and wished I new how to make. So, if you like your rice, and your culinary tastes are varied, this is the book for you. Pity it's out of print, but it does seem to be fairly available used here on Amazon and at other online used book stores. Worth the search.
